Porcupines

I have to say I was intrigued by the name alone and when I saw the recipe I had to give it a go. I must admit I altered the original recipe slightly after reading some if the comments on the recipe page. I used about a cup of cooked rice I had from the night before, had no celery salt so I didn’t use that and instead of table salt I used seasoned salt. I didn’t brown them in the skillet before baking, I just scooped out the balls using a cookie scooper and place them in the baking dish. Covered them with the tomato sauce/water and baked them covered in foil for about 45 minutes.

I will say the cooked rice has to be easier and reduces the chance of having crunchy rice. So I totally recommend doing that if you have it. I served this over mashed potatoes with a side of broccoli. A total hit in this house. I will say next time I’ll use different spices and maybe throw in some diced green peppers.
