Leftovers rediscovered

You know that feeling you get when you’re making something for the first time and you’re not sure it’s going to be good or not, then you take the first taste and realize its quite yummy, in fact it might be better than what you’d get in a restaurant? That’s pretty much how this sauce turned out for me.

Our dinner consisted mostly of leftover beef from our Mexican pizzas and the rice that went with it. But making this sauce and grating up some cheddar to sprinkle on top of the make shift enchiladas was a pretty damn good idea if do say so myself. The only thing I did differently than the original recipe was the salt. I only used 1/4 teaspoon mostly because I feared the chili powder might have enough saltiness for us. I also didn’t have a 15oz can of tomato sauce so I just used two 8oz cans. Worked out fine. The sauce makes quite a bit, which for me, is great since I have a dish in mind to make next week. I bought a can of sauce but happily will use this instead.
